Sausage Pasta

A crowd-pleasing easy mid-week meat-free dinner!

Ingredients

 1 tbsp Olive Oil
 1 Small onion (finely chopped)
 1 Clove of garlic (crushed)
 75 g Rigatoni dried pasta
 50 ml White wine
 125 ml Vegetable stock
 400 g Chopped tomatoes
 1 Red chilli (finely chopped)
 2 tsp Oregano
 150 g Sprouting broccoli
 1 Red pepper (cubed)
 A few leaves of fresh basil to garnish

Method

Pour the olive oil into a medium sized saucepan, bring to a medium heat and add the onion and garlic. Add the Naked Glory Sausages, and cook for 5 minutes, stirring regularly.

Meanwhile, bring a medium sized saucepan of water to the boil with a large pinch of salt. Once boiling, add the pasta and cook according to packet instructions.

Add the wine to your sausage pan and simmer for a couple of minutes, before adding the stock, tomatoes, chilli, oregano, broccoli and red pepper. Stir and cook for 10 minutes until the broccoli and pepper have softened.

Drain your pasta and add to your sausages. Mix well, season with salt and pepper and serve with a garnish of fresh basil, and some dairy free hard cheese or grated parmesan if you like.
