Sausage Casserole

A meat-free one pot wonder.

Ingredients

 1 tbsp Olive oil
 1 Large onion (finely chopped)
 2 Red peppers (sliced)
 3 tsp Smoked paprika
 2 Medium cloves of garlic (crushed)
 3 Sprigs of thyme
 3 Bay leaves
 400 g Cannellini beans (drained)
 125 ml Red wine
 400 ml Vegetable stock
 400 g Tinned tomatoes
 Salt & black pepper (to taste)
To serve
 4 Slices of slices of sourdough
 1 Garlic clove
 2 tbsp Olive oil
 Handful chopped parsley

Method

Preheat the oven to 180˚C / gas mark 4.

Heat the oil in a large flameproof casserole dish over a medium heat. Fry the Taste & Glory Sausages for a couple of minutes until browned on all sides. Remove them from the dish and set aside.

Add the onion, red pepper, smoked paprika, garlic, thyme and bay leaves and fry gently over a medium heat for a few minutes until softened. Deglaze the dish with the red wine, then slowly add the stock.

Next, add the tinned tomatoes and cannellini beans, seasoning generously with salt and pepper. Simmer over a medium heat for 10 minutes.

Add the sausages back into the dish for a further 5 minutes, and then place the dish into the oven for 15 minutes to cook.
