Mexican Style Chicken Burger

This vegan burger only requires 9 ingredients and comes together in 20 minutes with an easy to follow method.

 2 Taste & Glory Chick’n Burgers
 1 tbsp Olive Oil
 2 Burger Buns(cut in half)
 1 Avacado
 2 tsp Lime Juice
 1 Red Chilli
 1 Little Gem Lettuce
 200 g Sweet Potatoes
 3 tsp Sunflower Oil
Mexican Slaw
 2 tsp Fajita Spice Mix
 1 Red Cabbage(roughly chopped)
 1 Red Pepper(thinly sliced)
 1 Carrot(grated)
 1 Lime(juiced)
 2 tbsp Mayonnaise

Preheat oven to 200˚C. Cut the sweet potatoes into slender fries, leaving the skin on. Tumble the sunflower oil through the fries, spread on an oven tray and bake until crisp and golden (around 25 minutes).


Preheat a ridged pan and char the buns until nicely browned on both sides. Remove and put to one side.


Add a tablespoon of olive oil to a ridged pan and cook burgers as per packet instructions, turning frequently.


Smash avocado and add the chopped chilli with salt and a little lime juice.


Mix together the slaw ingredients.


Assemble with the lettuce leaves and slaw, and enjoy.
