Meatball Traybake
Tantalising tasty traybake!

Ingredients
1 Medium red onion (sliced into large chunks)
1 Yellow pepper (cut 1cm cubes)
2 tbsp Olive oil
125 g Frozen peas
100 g Cherry tomatoes (cut in half horizontally)
1 Lemon (zested)
1 Lemon (cut into 8 pieces)
3 Slices of bread (cubed)
Method

Pre-heat the oven to 180˚C. In a medium sized roasting tray add the onion and peppers. Drizzle with the olive oil and gently roast in the oven for 7 minutes.

Add the frozen peas, Naked Glory No-Meat Balls, lemon segments and cherry tomatoes to the roasting tin. Mix everything well and season well with salt and pepper.

Return to the oven to bake for 12 minutes until fragrant and the lemons are gently coloured.

Remove from oven and sprinkle with the bread. Mix well and return to the oven for 8 minutes before serving.
